Cafés Sustentables de Mexico, S.A. de C.V. is a coffee quality management company based in Tepic, Nayarit, Mexico. Cafés Sustentables de Mexico provides quality management and milling services to the region's coffee growing cooperatives. The company promotes complete traceability and production practices that maximize the value of the coffee using accepted Specialty Coffee Association of America (SCAA) and Coffee Quality Institute (CQI) standards.

Cafés Sustentables de Mexico also offers an annual quality management course with the support of San Cristobal Coffee Importers, the collaboration of the Universidad Autónoma de Nayarit, and help from the Consejo Nayarita de Café. The course teaches growers how to produce coffee with an emphasis on critical evaluation of samples and improvement of the end product. Students are exposed to all aspects of responsible coffee production, from farm to cup. The importance of each step of the process is presented and discussed, including proper grading, precision roasting, and formal cupping.
